Homemade pancake mix

There could not be an easier recipe to make at home that is so good. Well there are others, but this one is almost infinitely adjustable to your own tastes. Pancakes!

Alton Brown’s recipe for homemade pancake mix is nearly impossible to mess up. I always have some of the mix on hand.

I keep it in a large jar right on the counter.

I actually add in buttermilk powder to the mix (about 12 T or 3/4 cup) because rarely do I ever have buttermilk in the refrigerator. It just adds a bit of tang/sourness to the pancake.

Whole wheat flour, with added chocolate chips and dried cranberries, and a whole lotta maple syrup. Whole wheat because why not?
